Baby Spinach Salad with Grilled Chicken
2 chicken breasts
1 Bag of baby spinach
1 avocado
Some feta cheese
Some olives (I like pitted kalamata)
Optional grilled vegetables:
Different color peppers
Some onion
Some mushroom (I like shitake for this)
Optional nuts:
Almonds, walnuts, pecan, and cashews are all good

In a large salad bowel, dump the bag of spinach, add the avocado (cut in half, remove the pit, slice it up in the peel, then scoop out), feta, and olives.
If you're doing the vegetables, add them to a frying pan with some of the dressing and a handful of each of whatever nuts you are using. Cook to taste depending on how you like your vegetables. Remove all to a bowl.
Cut up the chicken breast and cook it, adding some olive oil if needed. I like to cook the chicken covered at a lower temperature to cook it then turn up the heat to quickly brown it. Add the bowl of vegetables and dressing and maybe add some more dressing if you like. Cook for just a minute or two to heat. Pour it all over the spinach and mix it up.
This makes a really nice meal, especially if you have some good bread. It's full of good fats and vegetables. It can be very filling and it's good cold too.
