Chicken and Sausage (with rice)
1 LB chicken breast fillet
3 thick hot Italian sausages
Add vegetables to taste. I like to use
4 - 6 cloves fresh garlic
Juice of 1 lemon
Some sweet pepper - red and yellow
Mushrooms - crimini or shitake are good
2 ripe vine tomatoes
If you like eggplant, cut up and fry half an eggplant in olive oil. I just sprinkle some salt in the frying pan.

Cut up all the vegetables keeping the tomatoes separated. In the pan you'll use for the everything, cook the sausage until it's about half done. Remove the sausage leaving any grease in the pan. Put the vegetables, except the tomatoes, into the pan and cover. Cut up the sausage and put it back in the pan. Continue sauteeing everything. Squeeze half a lemon. Cut up the chicken. Add the tomates then layer the chicken over everything. Sprinkle ground black pepper to taste. Squeeze the other half lemon and spray some olive oil on. Cover and let simmer for a bit then mix it up.
Rice
I make one of rice for this dish. Put 2 cups of water into a pot. Spray a little olive oil in (for taste and to prevent sticking). Sprinkle some dry dill and a little basil into the water. Add a cup of rice when the water boils, reduce the heat to low and cover until ready.
