Lemon Tarragon Chicken


1 1/2 LB chcken breast fillet

3 tbsp green onions

4 cloves fresh garlic

1 lemon

5-6 springs fresh parsley (I used dried)


2 tsp dried tarragon leaves

1/2 c white wine

2 tsp cornstarch

1 tsp sugar

olive oil


Prepare sauce by adding the following to food processor bowl; 2 strips lemon peel ( remove with vegetable peeler) and juice of lemon , (use garlic press to crush into mixture. add parsley, green onions, tarragon, wine, cornstarch,, and sugar. Process 20 seconds until well blended.


Season both side of chicken w/salt and pepper. Preheat large saute pan on medium-high 2-3 min.

Place oil in pan, swirl to coat. Add chicken, using tongs, and cook 2-3 min on each side.


Pulse sauce one more time, hen pour over chicken. Cover, reduce to medium low and simmer 6-8 min, turning occasionally . Serve sauce over chicken.
