Tangy Tropical Cucumber Salsa

Pinch of cayenne pepper

1 jalepeño pepper (ribs and seeds removed), minced

2 local pickling cucumbers, unpeeled, finely diced


2 Tbs lime juice

1 Tbs honey

2 Tbs extra virgin olive oil

1 cup finely diced fresh pineapple or mango

2 scallions, white and pale green parts, thinly sliced

1/4 cup fresh cilantro, chopped


In a medium bowl, whisk together cayenne pepper, lime juice, honey, and one Tbs olive oil; add cucumbers, pineapple, scallions, jalepeño. Season with salt; toss gently to combine.


My Variation

Delete cayenne pepper, jalepeño, and cucumber

Add one chopped tomato

I used one 8oz can of pineapple rings which I chopped on my chopper.


We made this with pan seared salmon steaks. The recipe called for salmon filet which would be just as good. Basically, make some salmon, put this salsa on it. Surprisingly delightful, esp. on a summer evening eating outside.
